You are buying access and time — a slot, a boat, a cellar door, a kitchen. What separates a good experience provider from a poor one is almost never the activity itself; it is group size, start time and whether the operator owns the asset or resells someone else’s seats.
Group size and exclusivity. A shared cooking class at €85 per person and a private one at €260 are the same three hours; the second one lets you ask questions.
For anything on water, in the air or above a certain altitude, ask for the operating licence and the passenger liability insurance limit. For food and drink, ask whether the venue is the producer or a tasting room reselling other people’s wine.
Booking through a reseller and assuming the operator knows your requirements. Dietary needs, mobility limits and children’s ages frequently do not survive the handover between platform and operator.
Experiences covers tours, activities, tickets, and within that the quality gap is wider than the price gap. Two companies quoting within 10% of each other can differ entirely in whether the service is operated in-house or subcontracted to whoever is available that week.
Cave hotels in Göreme and Ürgüp are small, and the good rooms are held on allocation from January. A locally present operator also fields a Turkish-speaking person at 6am when a transfer fails, which is when it matters.

In Turkey, one thing to raise specifically: single-morning balloon bookings. Operators that sell a flight with no fallback day are transferring the weather risk to the traveller, and this is the most common source of disappointment in Cappadocia.
